Instructions
1. Place the Steamed Black Glutinous Rice Brownie Mix and egg into a mixing bowl. Using a balloon whisk attachment, beat on high speed for approximately 6 minutes until the batter is light and fluffy. Add the coconut milk and gently mix until well combined.
2. Prepare a 22 × 10 × 7 cm loaf pan by greasing it with margarine and lining it with baking paper. Pour the black glutinous rice brownie batter into the pan and steam for 15–20 minutes, or until fully cooked.
3. To prepare the pandan layer, combine the Pandan Glutinous Rice Mix and egg in a mixing bowl. Beat with a balloon whisk on high speed for approximately 6 minutes. Add the coconut milk and gently fold until evenly incorporated.
4. Once the black glutinous rice brownie layer is fully cooked, carefully pour the pandan batter over the top. Smooth the surface, then steam again for 15–20 minutes, or until both layers are fully cooked.
5. Remove the cake from the pan and allow it to cool completely before slicing and serving.
