The story of the origin of brownies actually appears in various legends, such as a chef who adds melted chocolate to a biscuit batter or a cook is making a cake but lacks flour.

However, the most popular legend is the story of housewives in Bangor, Maine. According to Betty Crocker’s Baking Classics and The Encyclopedia of American Food and Drink by John Mariani, one day there was a housewife who made chocolate cake but forgot to add baking powder or baking soda to the mixture. When the cake does not expand, the mother still cuts the cake and presents it to her family.

Brownie recipes are believed to first appear in the Recipe Book of the Boston Cooking School written by Fannie Merritt Farmer in 1896. But that turned out to be a cake recipe that was colored and seasoned with molasses and made with marguerite mold.

However, after being verified by Jean Anderson in The American Century Cookbook: The Most Popular Recipes Of The 20th Century, the first brownie recipe ever came from an advanced recipe book from the Boston Cooking School.


Culinary historians themselves trace the first “brownies” cake from the 1906 edition of the Boston recipe book. The brownie recipe doesn’t use a lot of chocolate like the brownies we know today. The brownie recipe uses far less flour and uses a 17 cm baking mold.

Another ‘original’ brownie recipe appeared in 1907 in Lowney’s Cook Book Illustrated written by Maria Willet Howard. In this recipe, Mrs. Howard added more eggs and chocolate bars. This recipe was named the Bangor Brownies which made many people think that a housewife in Bangor had created brownies.
