History
Historians believed the Black Forest cake originated from the late 16th century in the Der Schwarzwald region (Black Forest) located in the state of Baden-Wttemberg. However this dessert was not named after the place, but from its region’s classic liquor, known as Schwarzwälder Kirsch (wasser) and distilled from the sour cherry Morello. In that era, chocolate was added to cake for the first time. Germans’ love for both the liquor and the chocolate produced a beautiful cake.
Similar to Traditional Clothes
The Black Forest cake is kind of similar to the traditional costume worn by women in the Black Forest region. The dress is black like a chocolate cake, the blouse is white like cream, the hat, Bollenhut, has red pom-poms that look like cherries, and the black lace veil that protects the eyes looks like chocolate flakes. No one is sure whether the cake’s ingredients were selected to resemble the outfit, but this is a good coincidence. The hat is even believed to have a weight similar to the Black Forest cake.
Inventor
Josef Keller (1887-1981) was the inventor of the Black Forest cherry cake. Keller is a pastry chef in Caf “Ahrend” (today called Agner) in Bad Godesberg. In 1915 he created a cake which he called “Schwarzwaelder Kirsch”, or “Black Forest Cherry” for the first time.
After his time in military, Keller set up his own cafe, Radolfzell. August Schaefer was trusted with Radolfzell’s trade from 1924 to 1927. After years of collaboration, Keller gave Schaefer his recipe book containing the original recipe of the Black Forest cake. The recipe book was inherited to his son, Claus, who continues to carry Keller’s original recipe.
Meanwhile, an archivist of Tübingen, Germany, found a photograph showing Erwin Hildenbrand, a pastry chef from Cafe Walz in Tübingen making a Black Forest cake in the spring of 1930. Previously, he worked in several places in the Black Forest.
World Record
The record for the world’s largest authentic Black Forest cake was made by K & U Bakery in Europa Park, Germany on July 16, 2006. The cake is nearly 80 m² and weighs 3,000 kg. The 10 m diameter cake used 700 liters of cream, 5,600 eggs, 800 kg of cherries, 40 kg of chocolate shavings, and 120 liters of kirsch.
Additionally, on December 9, 2012, a team led by chefs Jörg Mink and Julien Bompard made the biggest Black Forest cake in Asia. Took place at S-One Expo, Singapore, the team succeeded in making the 500-kg cake made from 165 liters of cream, 1,500 eggs, 68 kg of cherries, 60 kg of chocolate shavings, and 10 liters of kirsch.
