Setting the temperature or oven temperature and baking time when making a cake is crucial to achieving the perfect shape, texture, and flavor of the cake. Sometimes in recipes or cake-making methods in recipe books or online media, the author often does not mention the temperature or baking time.

For example, if we bake a chiffon cake at a moderate temperature, the chiffon cake will burn on the outside while the inside is not yet cooked. Or another example, if we bake a sponge cake at a low temperature, the sponge cake will not rise. Therefore, setting the oven temperature and baking time for cakes is very important. Here are tips for setting the oven temperature and baking time when making cakes:

  • If the temperature and baking time are not specified in the recipe, try setting the oven to 180 degrees Celsius and baking for 30 minutes for Gusto sponge cake, batter cake, pound cake, and slightly larger cookies. For Gusto cream puffs, Surabaya layer cake, and roll cakes, generally use a high temperature between 190 to 200 degrees Celsius. Meanwhile, for cheesecakes, the temperature usually ranges between 130-150 degrees Celsius.
  • If after 15 minutes the cake looks very brown or starts to crack, this indicates that the oven is too hot. Lower the temperature by 5 or 10 degrees and continue baking the cake.
  • But if after 15 minutes the cake still looks pale and hasn’t risen, then increase the oven temperature by 5 to 15 degrees depending on the condition of the cake at that time.
  • After 30 minutes, open the oven and test if the cake is cooked by inserting a toothpick or skewer. If there is no cake batter sticking to it, it indicates that the cake is done. But if there is batter sticking to it, put it back in the oven and continue baking the cake.

Of course, all of this applies very generally. The most important thing is to know your oven. Don’t forget to add the temperature and baking time to the recipe you are trying.
